Five Easy Ground Beef Recipes
Everyone loves tacos, but even the most dedicated taco lover can use a few more ideas for their ground beef. Here are five of my tried and true burger recipes
Sloppy Joes
I like to pull this one out when we are tired of regular burgers
ingredients
1 lb ground beef
1/2 cup finely diced onion
1 cup ketchup
2 Tbsp red wine vinegar
2 Tbsp brown sugar
1 Tbsp yellow mustard
1 garlic clove, minced
4 hamburger buns
In large skillet, brown ground beef until deeply browned. Add rest of ingredients and bring to a boil. Reduce heat to low, stir and simmer, covered, 15 minutes or until the meat is hot and the sauce has blended with the meat. Serve immediately on hamburger buns.
Stroganoff
Stroganoff is my comfort food. I love the creaminess of this meal.
ingredients
1 lb ground beef
1/2 cup diced onion
1 clove garlic, diced
2 cans cream of mushroom soup
1 cup milk
1 cup sour cream
salt and pepper
sliced mushrooms (optional)
In large skillet, cook ground beef and onion until burger is browned. Add garlic, cream of mushroom soup, milk and mushrooms, if using. Simmer until mushrooms are soft, about 5 minutes. Turn off heat, add sour cream and mix in. Serve over noodles, rice or mashed potatoes.
Fourth of July Baked Beans
This recipe isn’t a main dish, but it really is the best baked bean recipe I have ever tried. I got this recipe from a friend who found it in a magazine. It is a keeper.
ingredients
1/2 lb. ground beef
1 large onion
1/2 cup packed brown sugar
1/2 cup ketchup
1/2 cup barbecue sauce
2 Tbsp yellow mustard
2 Tbsp molasses
1/2 tsp chili powder
2 cans (13.7 oz each) beans with tomato sauce
1/2 lb bacon strips, cooked and crumbled
Preheat oven to 350. In a large skillet, cook beef and onion over medium heat 6-8 minutes or until meat is no longer pink, breaking up beef into crumbles.
Stir in sugars, ketchup, barbecue sauce, mustard, molasses and chili powder. Add beans and cooked, crumbled bacon.
Transfer to a 13 x 9 inch baking dish. Bake, covered 45 minutes. Uncover and bake additional 15 minutes.
Porcupine Meatballs
This is a recipe that my mom used to make. It freezes well, so you can make lots of meatballs, brown them and then freeze them to pull out later.
meatball ingredients:
1 lb ground beef
1 egg
1/4 cup bread crumbs
2 medium carrots, grated
2 medium potatoes, grated
1 small onion, diced
salt and pepper to taste
Mix all, form into balls and brown in frying pan. When brown on all sides, move to a baking dish.
Sauce:
4 Tbs butter
4 Tbs flour
1/2 tsp salt
1/4 tsp pepper
2 cups milk
1 can cream of mushroom soup
In same frying pan, melt butter then stir in flour, salt and pepper. Cook over medium heat, stirring constantly until mixture is smooth and bubbly. Add milk gradually. Heat to boiling and boil one minute, stirring constantly. Add soup ( undiluted) and stir until smooth. Pour over meatballs and bake at 325 for 30 minutes. Remove from oven and add cheese to top if desired. Serve hot. Goes well with rice or noodles.
Navajo Tacos
Okay, I know I said no tacos, but this is a fun twist on a well-loved favorite that makes my kids excited for taco night. It really is simple to make with just a few extra ingredients. Oil, and bread dough. To make this really easy, pick up some frozen roll dough at the grocery store, let it thaw during the day and use it for the fry bread. If you have a favorite bread recipe, that will also work. If you are tired of taco meat, chili is amazing on these as well.
ingredients:
oil for frying
bread dough
taco toppings
Heat oil in a deep skillet until very hot, but not smoking. Roll out rolls with a rolling pin, or stretch by hand. Cook fry bread a few rolls at a time. Fry on first side until golden brown, then flip and brown the other side. Let drain on a paper towel and serve.
