3 Soup Recipes with Ground Beef
Ground beef is so versatile and can go in so many recipes, but sometimes we forget about soups. Here are three ground beef soup recipes that will warm you up.
No Chop Chili
Just open cans to make this yummy chili
ingredients
1 lb ground beef, browned
1 can stewed tomatoes
1 large can chopped or diced tomatoes
1 small can tomato sauce
2 cans beef broth
1 can chili beans (beans with tomato sauce)
2 cans kidney beans
Simmer all together until heated through. Serve with cheese and sour cream if desired.
Taco Soup
I use this one often when I have leftover taco meat, but you don’t need to wait to make this yummy soup.
ingredients
1 lb ground beef
1 medium onion, finely chopped
2 cans beef broth
1 can diced tomato with juice
1 can corn (we don’t add this)
1 can black beans
1 can pinto beans
1 packet taco seasoning
In soup pot, cook ground beef and onion together until burger is browned and crumbled. Add remaining ingredients and bring to a boil. Serve soup and top with cheese, sour cream, lime, cilantro and corn chips.
Beef Stew
This recipe is flexible. Use the veggies you have. I love celery in my stew, but I rarely have it on hand. This stew does fine without it.
ingredients
1 lb ground beef or stew meat
1 medium onion, diced
4 carrots peeled and cut into 1” pieces
1 rib celery
4 medium potatoes, quartered (peel them or not. I like peels)
12 oz stewed tomatoes
2 cups broth (chicken or beef)
1 Tbs worcestershire sauce
1 Tbs parsley
1 bay leaf
In soup pot, cook ground beef and onion until burger is browned. Add other ingredients and bring to a boil. Cook until potatoes and carrots are tender, about 20 minutes.
This recipe also works well in the crockpot. Throw everything in and cook on high for 4 hours, or on low 8 hours.
